GREEK CUCUMBER DIP 
2 c. thick yogurt
1 c. cucumber, chopped finely
1 clove garlic, crushed
2 tsp. olive oil
1 tbsp. fresh dill
1 tbsp. lemon juice

To thicken yogurt, line a sieve with cheese cloth. Place the sieve over a bigger bowl. Pour yogurt in sieve and drain the yogurt (about two hours). Sprinkle salt over cucumber. Let stand 15 minutes and press dry. Combine all the ingredients in a bowl. Chill. Makes 3 cups. You can serve this with cut vegetables.

The sauce is called tzatziki. This recipe is made with vinegar instead of lemon and strained yogurt. Also season with salt.
