STUFFED PASTA SHELLS 
1 box jumbo pasta shells
1/2 lb. sausage
2 cloves garlic
1 minced onion
2-3 mushrooms, minced
1 tsp. parsley
1 egg
1 tsp. tarragon
1 1/2 c. tomato sauce (I like Ragu)
1 c. grated Mozzarella cheese

Cook shells according to package directions; drain. Mix sausage, garlic, onion, mushrooms, parsley, egg, and tarragon. Stuff shells with meat mixture. Cover bottom of pan with 1/2 cup tomato sauce. Place stuffed shells in pan. Sprinkle with Mozzarella. Cover shells with 1 cup tomato sauce. Cook uncovered at 350 degrees for 30-40 minutes.
