EDITH'S BEEF STROGANOFF 
1 lb. round or sirloin steak, cut into thin strips
1/2 c. sour cream
1/2 c. sliced onions
1 sm. can mushrooms (or fresh mushrooms), sliced
1 can Campbell's Golden Mushroom Soup
2 tbsp. Canola oil
1 tbsp. minced parsley

In skillet brown meat and cook onion in Canola oil until tender. Season with salt and pepper; stir in soup and water. Cover and simmer until tender, about 2 hours. Add sour cream, mushrooms and parsley. Simmer 1/2 hour longer. Serve over rice or noodles.
