CRAWFISH FETTUCINI | |
2 lbs. crawfish 2 sticks butter 1 med. onion and 1 bunch green onions, chopped 1 bell pepper, chopped 3 stalks celery, chopped 4 pods garlic, chopped 12 oz. egg noodles 4 tbsp. parsley 1/4 c. flour 1 pt. half and half 1 lb. jalapeno cheese (I use 1/2 lb. Velveeta jalapeno cheese and 1/2 lb. reg. Velveeta, otherwise it's too spicy) After chopping all vegetables fine then saute onions, bell pepper and celery in butter. Add parsley, garlic and crawfish. Cook 10 minutes. Add flour, half and half and cheese. Simmer for 30 minutes. Boil and drain noodles while mixture is simmering. Add noodles to mixture. Pour into casserole and top with grated cheese. Bake at 350 degrees for 20 minutes. Makes 1 large casserole and will serve 6-8 persons. |
