CRAWFISH FETTUCINI 
2 onions
2 ribs celery
1 stick butter
2 tsp. flour
1 lb. crawfish tails
3 tbsp. parsley
2 cloves garlic
1 pt. half and half
1/2 lb. Velveeta cheese
12 oz. egg noodles
Parmesan cheese

Shrimp can be used in place of crawfish. Saute onions, celery, and garlic in butter until tender. Add flour, cook 5 minutes, stirring constantly. Slowly add half and half and crawfish. Add cheese and parsley. Cook on low heat for 15 minutes, stirring occasionally. Place in big casserole dish. Sprinkle with Parmesan cheese. Cook in 350 degree oven for 15 minutes or until bubbly.
