SCALLOPED PINEAPPLE 
1/4 c. butter, melted
4 c. fresh bread cubes
3 eggs
1 c. sugar
1/2 c. half and half or evaporated milk
1 (20 oz.) can crushed pineapple, undrained

Combine butter and bread cubes. Mix well and set aside. Combine eggs, sugar and milk; beat with electric mixer just until blended. Add bread cube mixture and pineapple, stirring well. Pour into lightly greased 2 quart baking dish. Bake, uncovered, at 350 degrees for 1 hour.

If you use unsweetened pineapple you may want to increase the amount of sugar to 1 1/2 cups. I like to sprinkle some cinnamon on top. Serves 6 to 8.
