HAM, SWISS AND BROCCOLI QUICHE 
1 (9 inch) deep dish pie crust
1 c. Half and Half
4 eggs, slightly beaten
1/3 to 1/2 tsp. dry mustard
1/4 tsp. pepper
1 c. cubed cooked ham (or turkey, or chicken)
1 1/2 c. shredded Swiss cheese
1 c. fresh broccoli florets, cooked 3 minutes
1 tbsp. chopped onion

Preheat oven to 350 degrees. In a bowl, combine Half and Half, eggs, dry mustard, and pepper. Set aside. Layer ham, cheese, broccoli, and onion in pie crust. Pour egg mixture over all. Bake at 350 degrees for 40-45 minutes or until inserted knife comes out clean. Cool for 5-6 minutes before cutting in 6 to 8 wedges. Refrigerate remainder. Makes 4-6 servings.
