Cake Mix Cookies

Made these cookies from Red Velvet cake mix. Make your cookies small; cool them. Size them up to make sandwiches. Fill with this mixture: 1 cup soft butter, 1 cup marshmallow fluff and 1 cup powdered sugar. Place on a plate and sprinkle with powdered sugar. What a hit at Christmas! Chocolate cake mix works well too!

Very very easy to make, we have them on every holiday at work, but with different cake flavors, they turn out really soft. If they are too hard that means you have cooked them too long.

I learned a variation of this recipe in junior high and LOVED it, but that one actually said not to use either oil or egg, I don't remember which one, and no matter how I tried to make them...they came out horrible! So I'm happy to have a recipe in front of me again, and make edible cookies.

Cherry Chip cake with a little vanilla and almond extract, and chunks of dehydrated cherry... yummy. :]

I make these using chocolate cake mix, 2 eggs and 1/3 cup of oil. No water. Add some chopped pecans to dough and then wrap around a rolo (chocolate candy with caramel filling) and bake 12 minutes. The caramel melts and makes a wonderful filling! Also good with mini peanut butter cups, want to try small peppermint patties.

My mom used to make this recipe using a chocolate cake mix and rolled the balls of dough in powdered sugar before baking them. They were my favorite cookies, SO DELICIOUS!

I tried this recipe with Duncan Hines Moist Deluxe Red Velvet. I had to add an extra 4 teaspoons of oil and an extra 5 teaspoons of water. & They turned out amazing! I used a little bit of whipped Cream Cheese Frosting(by Duncan Hines). **The dough will fell kind of dry and you'll need some force to mix it. But it's okay, they'll turn out amazing! I checked on them every 5 minutes just to make sure they wouldn't burn. I suggest you do the same. Sometimes it will take 15 other times it only took 10.**

I have rheumatoid arthritis, lupus and fibromyalgia, and it has become quite difficult to do the type of cooking & baking I used to. Thank you so much for this quick and easy cookie recipe! Now I don't feel so guilty about not being able to make treats for my daughter and her friends! :)
