AMISH MOIST APPLE CAKE 
3 eggs
1 1/4 c. sugar
1 c. oil
2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 c. chopped apples
1 c. chopped nuts (optional)

Beat eggs, sugar and oil. Sift in dry ingredients. Fold in apples and nuts.

Bake at 350°F for 40 to 50 minutes in a 9 x 13-inch pan.
