Took advice from above and used a devils food cake mix and put a mini peppermint patty in the middle. Only made two dozen so bake time was almost twenty minutes and they were fabulous. Will make again for sure. Thanks for the tip. Great recipe and very easy !!

My sister just gave me a similar recipe tonight. 1 cake mix, one stick of butter (room temp) and 2 eggs (room temp). Amazingly simple and delightful! I even tried carrot cake and white chips! Getting ready for a bake sale to raise money for our troops!!

I used a white cake mix and added chopped maraschino cherries, about 1/2 cup coconut and 1 teaspoon almond extract. Excellent and soft!

I got this recipe from a friend a few years back using yellow cake mix with the red and white andes mints at Christmas. They go sooo fast. I do choc chip for non-mint folks. Yep there are a few out there. Just stand back from the oven because that mint will get you coming out! I came on here because I couldn't remember if she to to get the butter recipe mix or to NOT get it but since there or no comments against it and it is what is in the pantry I am going for it. Going to try new ideas too. And carrot cake mix too! Dippied in almond bark! Mmmm.

my mom used to make these all the time because they are so cheap and easy. I made these today with German chocolate cake, then took the coconut pecan frosting and put on top of one cookie and put another cookie on top -- German chocolate cookie sandwich!

I used a cake mix past the expiration date (14 months !!) - so added 1 tsp. new baking powder in case they were too old. Cookies were great. Does anyone know if I really needed to add the baking powder. Appreciate all the great variation ideas.

My Mom and I used to make these 35-40 years ago, and I have been looking for this recipe. Thanks so much for posting it. My favorite is just chocolate cake mix with a little 10X sugar after baking!

I wish I knew what was wrong. I made these with a Betty Crocker Devil's Food Cake mix and the Andes Mint Chocolate Baking Chips. Used a small melon baller to size cookies. Two batches came out burned on bottom, although I used parchment paper on cookie sheets. I lowered the oven temp and checked them early, but the next batch (two sheets' worth) was even WORSE, burned all over the bottom and turned hard as rocks within an hour so that the kids couldn't even test them when they got home. I suspect the Andes baking chips melt at a lower temp than the dough, so maybe that is what's burning and running out? Or is my oven way out of calibration and too hot? Sigh!!
