CAKE MIX SANDWICH COOKIES | |
I can use 3 boxes of cake mix cookies to one tub of frosting, sometimes 4 boxes just depending on how much frosting I want on each cookie. These are so easy and fun to make, especially with young children. Get creative and try strawberry cake mix with chocolate frosting or lemon with cream cheese. 1 box cake mix (your choice) 1/2 cup vegetable oil (use just slightly less) 2 eggs 1 tub prepared frosting Preheat oven to 350°F. Mix together cake mix, oil and eggs, beat until smooth. Roll into balls. You should end up with 24 balls all-together, making a dozen cookies since they will be sandwiched together. Bake at 350°F for 6 or 7 minutes, or until they look like they are cracking. Don't over-bake or they will become hard and these are meant to be soft and chewy.
