ZUCCHINI & TOMATO CASSEROLE 
12 sm. zucchini or summer squash
12 sm. tomatoes
1 lg. onion
Salt & pepper
Brown sugar
1 1/2 c. cracker crumbs
1/2 c. (1 stick) butter in pieces
1 1/4 c. grated cheddar cheese

Preheat oven to 350 degrees. Wash and thinly slice zucchini. Peel and thinly slice tomatoes and onion. Divide onion into rings. In an oiled 3 quart casserole, place a layer of zucchini, tomatoes and onion rings. Sprinkle a bit of salt, pepper, brown sugar over the onion. Then add a handful of crumbs, a few bits of butter and handful of cheese. Repeat twice. Top layer should be cheese.

Bake covered for a total of 1 1/4 hours. Remove lid after 1/2 hour and continue until center is bubbling hot.
