ZUCCHINI-TOMATO CASSEROLE 
1 med. zucchini, sliced thin
2 lg. tomatoes, peeled & chopped
1 med. onion, sliced thin & separated
1/2 c. grated cheddar cheese
3 slices bacon, cooked & crumbled
Butter
Salt & pepper

In buttered casserole, layer tomatoes, onion and zucchini. Dot with butter and scatter cheese and crisp crumbled bacon over each layer. Salt and pepper lightly. Cover with buttered bread crumbs. Bake, covered at 400 degrees about an hour, uncovered for the last 20 minutes. No extra moisture is needed. Serves 3 or 4.
