ZUCCHINI - TOMATO CASSEROLE | |
1/2 lb. American cheese 4 tbsp. melted butter 3 c. rye bread cubes, 1/4 inch 4 c. thinly sliced zucchini 1 med. onion, thinly sliced 3 tomatoes, sliced 1/2 c. finely chopped green pepper 1/2 tsp. salt Dash of pepper Slice cheese into 12 slices. Pour melted butter over bread cubes; mix thoroughly. Place a layer of zucchini, onion, tomato and green pepper in a 3- quart casserole, using 1/3 of each. Sprinkle with salt and pepper, cover with 4 slices cheese and a layer of bread cubes. Repeat layers twice. Cover and bake at 350 degrees for 1 hour and 30 minutes or until vegetables are tender. Serve hot. Servings: 8. |
