ZUCCHINI-TOMATO CASSEROLE 
3 slices bacon, cut in 1-inch pieces
1 med. zucchini, sliced
2 lg. tomatoes, peeled, sliced and seeded
1 med. onion, sliced
1/2 c. grated Cheddar cheese
1/2 c. bread crumbs
Salt and pepper to taste

In a 2-cup glass measuring cup, microwave bacon on high for 2 to 3 minutes. Remove bacon and crumble and reserve.

In a 1 1/2 quart casserole, mix zucchini, tomatoes, onions, salt and pepper. Micro-cook covered 10 to 12 minutes. Sprinkle with cheese, then bread crumbs, top with bacon and cook on high 3 to 5 minutes until cheese begins to melt. Let rest covered about 5 minutes and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
