TOMATO AND ZUCCHINI CASSEROLE 
4 med. zucchini
3 tomatoes, sliced
1 clove garlic, split
3 tbsp. oil
3/4 c. cheddar cheese, grated
1/4 tsp. each oregano & basil
1/4 tsp. salt
1/2 c. fine bread crumbs
2 tbsp. butter, melted

Wash zucchini and cut into 1/4 inch slices; peel and slice tomatoes. Saute garlic in oil and discard garlic. Saute zucchini in the same oil. Place in an oiled casserole, in two layers, the zucchini, cheese, seasonings, and tomatoes. Add bread crumbs and melted butter. Bake uncovered for 30 minutes at 350 degrees. Serves 5 to 6.
