TOMATO ZUCCHINI CASSEROLE 
2 tbsp. butter
3 med. zucchini, sliced diagonally
1 lg. onion, sliced
3 lg. tomatoes, sliced (about 1 1/2 lb.)
1/2 c. fresh grated Parmesan cheese
1 clove garlic, minced
1 tsp. salt
1/4 tsp. fresh ground pepper
2 tsp. leaf basil, crushed

Rub shallow baking dish with 1 tablespoon butter. Line dish with half each of zucchini, onion and tomato. Combine remaining ingredients in small bowl. Spoon half of mixture over tomatoes. Dot with half of remaining butter. Repeat layers. Dot with butter. Bake at 375 degrees for 45 minutes. This can be prepared ahead and refrigerated. To serve, remove from refrigerator one hour before baking. Serves 6.
