COCONUT CREAM PIE 
6 eggs, separated
3 c. sugar
6 tbsp. flour
1/2 c. milk
2 tsp. vanilla
1 tsp. salt
1 lg. can evaporated milk
1 stick butter
1 c. coconut
2 pie shells, baked

Separate eggs and set whites aside. Beat egg yolks; mix with sugar and milk, and cream flour and salt. Cook, stirring, in heavy saucepan. When thickens, add vanilla, butter and coconut. Pour into baked pie shells.

MERINGUE TOPPING:

6 egg whites
1 c. sugar
1 tsp. vanilla

Beat egg whites until stiff; add sugar and vanilla. Sprinkle coconut on top.

Bake until light brown. Cool before serving.
