COCONUT CREAM PIE 
6 tbsp. sugar
5 tbsp. flour
1/4 tsp. salt
2 c. milk
3 egg yolks, beaten
1 c. flaked coconut
2 tsp. vanilla
1 baked pie shell

MERINGUE:

3 egg whites
4 tbsp. sugar
1/2 c. flaked coconut

Combine sugar, flour, and salt in saucepan. Add milk and egg yolks and mix thoroughly. Cook 10 minutes, stirring constantly. Add coconut and vanilla and cool. Pour into pie shell. Beat egg whites until soft peaks form, then beat until stiff adding sugar slowly. Spread on pie and sprinkle with coconut. Bake at 425 degrees until light brown.
