BEEF ENCHILADAS 
1 lb. hamburger
1 lg. onion, chopped
1 can ripe olives, chopped into fourths
12 oz. pkg. cheddar cheese, grated
1 pkg. corn tortillas
10 oz. can enchilada sauce

In a covered microwaveable casserole dish, brown hamburger and onion until meat loses its pink color. Drain off fat. Takes about 5 minutes. Wrap tortillas in a towel and microwave on High about 1/2 to 3/4 minute, until pliable. Pour about 1/4 can enchilada sauce into 9 x 13 inch casserole dish, covering the bottom. Hold a tortilla, and place about 1 heaping tablespoon hamburger and onion mixture, spreading it across the center of tortilla to the ends. Sprinkle on some chopped ripe olives and grated cheese, reserving about half the cheese for the top. Roll up each tortilla and place seam side down in casserole. Pour rest of sauce over tortillas and microwave on High about 10 minutes until hot and bubbly. Then sprinkle rest of grated cheese over top and microwave for 1 1 to 2 minutes until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
