MEXICAN ONION - BEEF SKILLET 
1 med. onion to measure 1 1/2 c.
1 lb. ground beef
1 (10 oz.) can enchilada sauce
1/4 c. water
Salt to taste
1 1/2 c. corn chips
Grated cheddar cheese

Peel and finely chop 1 medium onion to measure 1 1/2 cups. Saute onion with ground beef about 10 minutes or until onion is tender. Stir in 1 can enchilada sauce and 1/4 cup water. Add salt to taste. Simmer 5 minutes. Stir in 1 1/2 cups corn chips. Cover and let stand 5 minutes. Sprinkle with grated cheddar cheese. Yield 4 servings.
