BEEF AND PEPPER RICE SKILLET 
1 1/2 lbs. round steak, cut in thin strips
2 tbsp. cooking oil
1 c. sliced onion
1 c. rice
1 can (10 1/2 oz.) beef broth
Water (soup can)
3 tbsp. soy sauce or to taste
2 green peppers, coarsely chopped
1 jar (2 oz.) sliced pimento, drained

Brown beef in oil in skillet. Stir in onion, rice, beef broth, one can of water and soy sauce. Bring to a boil. Reduce heat. Cover and cook over low heat until liquid is absorbed, about 25 minutes. Stir in green pepper and pimento. Heat through.
