BEEFY RICE AND ZUCCHINI SKILLET 
3/4 c. rice
1 lb. ground meat
1 onion, chopped
2 med. zucchini
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
Corn chips
1 c. water
1 3/4 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
1/4 lb. shredded Swiss cheese
1 tsp. chili powder

Prepare rice. In skillet, brown meat. Add onions and cook until tender. Stir in zucchini, tomato sauce, tomato paste, water, sugar, salt, pepper, chili powder and cooked rice. Heat to boiling, then simmer 20 minutes, uncovered. Sprinkle cheese over mixture in skillet and cover. Cook 3 minutes or until cheese is melted. Garnish with corn chips.
