SPINACH PIE 
10 oz. frozen chopped spinach, thawed and squeezed dry
8 oz. low or non fat cottage cheese (or substitute 8 oz. feta cheese)
2 whole eggs and 1 egg white, beaten to a form
1-2 oz. Mozzarella cheese, shredded
Salt and pepper to taste

Mix spinach and cottage cheese together. Stir in beaten eggs, Mozzarella and season. Spray a pie tin or round cake pan with cooking oil spray. Pour in mixture. Bake in a 350 degree oven for 30 minutes or until top is lightly browned. Cut into wedges.
