SPINACH MUSHROOM SOUP | |
(An "Olde English" recipe.) Serves 6 to 8. 1 1/2 lb. fresh spinach, cut up 1 lb. fresh mushrooms, sliced 1 med. onion, chopped 1/2 lb. butter substitute 1 c. flour 1 gal. chicken stock or water and chicken base Seasonings: garlic, salt and pepper to taste Saute' vegetables in butter. Add seasonings. Slowly add flour and chicken stock. Cook low, stir frequently for 1/2 to 1 hour. Delicious with hot muffins. |
