RICE PUDDING, LOW CALORIE 
1 1/2 c. skimmed milk
2 tbsp. sugar
1 tsp. butter
1 egg, beaten
1 to 2 c. leftover cooked rice
Raisins

Mix the beaten egg, milk, sugar and butter. Put the leftover rice in a small casserole. Pour the milk mixture over the rice. Add a generous handful of raisins, if desired and mix well.

Set in a pan of hot water and bake in a 350 degree oven for about 40 minutes or until a knife stuck in the middle comes out clean. Let cool before eating.
