LOW CALORIE RICE PUDDING 
3 c. skim milk
1 stick cinnamon
4 tbsp. raw rice
1/3 c. raisins
3 lg. eggs
1 1/2 tsp. liquid artificial sweetener
1/4 tsp. salt
1 tsp. vanilla

Combine in top of double boiler the skim milk, stick cinnamon, rice. Cook over simmering water for 45 minutes. Remove cinnamon stick. Add raisins; cook 10 minutes longer.

Combine eggs, artificial sweetener, salt, and vanilla; add to hot rice, stirring rapidly. Cook, stirring, 2-3 minutes until thickened. Pour into serving bowl. Serve warm or cover and chill. Serves 6-8.
