CREAMY LOW CALORIE RICE PUDDING 
1 (4 serving) pkg. Jello sugar free vanilla pudding and pie filling
3 c. lowfat milk
1/2 c. original Minute rice or Minute premium long grain rice
1/8 tsp. cinnamon

Combine all ingredients in a saucepan. Bring to a boil over medium heat, stirring constantly. Pour into a 1-quart casserole or individual dessert dishes. Place plastic wrap directly on surface of hot pudding. Chill 30 minutes, remove plastic wrap. Sprinkle with additional cinnamon, if desired. Makes 8 servings.
