CREAMY RICE PUDDING 
3/4 c. regular brown rice
3/4 c. regular white rice
1/4 c. raisins
1/4 c. sugar
1 tsp. flour
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Dash of salt
1 c. skim or lowfat milk
1 egg, slightly beaten
1 tsp. vanilla

Microwave Directions: In casserole dish, combine rice and raisins. Set aside. Combine in 2 cup microwave safe small bowl, sugar, flour, cinnamon, nutmeg and salt. Gradually stir in milk and egg. Microwave on high 3 to 3 1/2 minutes until mix is thick, stirring every minute. Put in vanilla and pour over rice mixture. Mix well. Cover with wax paper and microwave on medium for 3 to 5 minutes or until center is almost set. Let stand 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
