OLD FASHIONED CREAMY RICE
PUDDING
 
4 c. whole milk or half & half
1/4 tsp. salt
1/2 c. rice
1/2 c. raisins
1 can evaporated milk
2 eggs
1/2 c. sugar
1 tsp. vanilla

Cook milk and salt until slightly heated, stir in rice. When mix boils lower heat and simmer 15 minutes. Stir occasionally. Add raisins, cook 5 more minutes. Add 1/4 cup evaporated milk, cook a few minutes. Combine eggs, vanilla, sugar and remainder of evaporated milk. Stir some hot rice into egg mixture. Add this to soaked mixture and cook slowly until it thickens. Place in bowl and top with nutmeg.
