PA DUTCH CREAMY RICE PUDDING 
1 qt. milk
1/2 c. rice
2 tbsp. butter
1/4 c. sugar
2 eggs
1 tsp. vanilla
1/4 tsp. salt

Stir together milk, rice, butter, salt and sugar. Pour into double boiler and cook slowly 1 - 1 1/2 hours until rice is soft. Beat the eggs, remove 1 cup of hot milk and rice from double boiler and gradually add to the beaten eggs. Then add the egg mixture to rest of pudding. Stir in vanilla. Serve warm or cold. 10 servings.
