SWEET POTATO SOUFFLE | |
2 c. cooked mashed sweet potatoes (3 med.) 2 egg yolks 1/2 c. pecans 1 c. scalded milk 2 to 4 tsp. honey 1/2 c. raisins 1/2 tsp. nutmeg 2 egg whites, stiffly beaten Mix together all ingredients, folding in egg whites last. Pour into an oiled 1 1/2 or 2 quart casserole and bake at 350 degrees for 1 hour. Makes 4 servings. |
