SOUTH CAROLINA SWEET POTATO
SOUFFLE
 
3 lg. sweet potatoes
3 tsp. butter
3 eggs, well beaten
1/4 c. flour
2 tsp. allspice
1/2 c. raisins
1 tsp. vanilla
2 c. sugar
1/2 c. shredded coconut
Marshmallows (opt.)

Peel and grate potatoes. Add eggs, allspice, raisins, vanilla, coconut, butter and flour and sugar; mix well. Bake in a shallow baking pan or dish slowly in moderate oven, 300 degrees for 1 hour. Optional: Place marshmallows on top the last 10 minutes of baking time.
