SWEET POTATO SOUFFLE 
1 c. milk
1/2 tsp. salt
2 tbsp. butter
2 c. mashed sweet potato
2 eggs, separated
1/2 c. raisins
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 tsp. vanilla extract
Approximately 15 marshmellows

Scald milk with next 3 ingredients. Add to potato and beat well. Beat egg yolks and add to potato mixture. Stir in raisins, nutmeg, cinnamon and extract. Fold in beaten egg whites and pour in with marshmellows. Bake in slow oven (325 degrees F.) 45 minutes or until set. Makes 6 servings.
