SWEET POTATO SOUFFLE 
4 c. mashed sweet potatoes
2 eggs, beaten
1/4 tsp. salt
2/3 c. raisins
1/2 c. sugar
1/2 c. softened butter
2 c. miniature marshmallows

Beat potatoes, butter, sugar and eggs until fluffy in large bowl. Stir in raisins and salt. Bake in baking dish at 350 degrees for 45 minutes. Just before done, arrange marshmallows on top and let melt (lightly brown).
