POTATO/KALE/SAUSAGE SOUP | |
1 lb. hot sausage patties 1 large diced onion 5 to 6 c. hot water 1 pkg. frozen kale, drained 4 to 6 cubed potatoes 1 tbsp. basil (dry) 1 can evaporated milk Romano cheese (for serving) Brown sausage meat with onion until fat is rendered out. Drain all fat when sausage is no longer pink. Add water and simmer about 1/2 hour. Add kale, potatoes and basil and simmer another 1/2 hour. Add evaporated milk; heat and serve. Sprinkle with grated Romano cheese as desired. Can substitute chopped spinach instead of kale. |
