NORA'S FAST SHRIMP AND PASTA
SALAD WITH CORIANDER
 
1 (8 to 12 oz.) pkg. small frozen shrimp or prawns
1 (15 oz.) can three bean salad, drained (Green Giant)
4 or 5 large stalks celery
1/2 (16 oz.) pkg. pasta (your choice)
bunch of fresh coriander
mayonnaise (Hellmann's or Best Foods)
3 tbsp. garlic puree, or to taste (sold in a jar)

Prepare 1/2 package of pasta according to package directions (A pasta shape that stays firm when cooked is better than a really floppy one).

Meanwhile, rinse the frozen shrimp under cold water until all the ice is gone, drain and put in a large serving bowl.

Chop the celery and drain the mixed beans and add them to the shrimp. Chop fresh coriander and add to taste - if all your family/guests are not big coriander fans, you can save some aside for those who really love coriander to add as a garnish.

Drain the pasta and rinse under cold water until cold, and add to the mixture. Toss with mayonnaise mixed with garlic puree, to taste - you want the ingredients lightly coated with mayonnaise but not gooey, and the amount of garlic is a matter of personal taste. I use about three tablespoons of garlic puree.

I used to find this a bit bland without salt but I've stopped adding salt to my food and I find now I don't miss it, so use your own judgement...
