“COTTAGE POTATOES” IS IN:

COTTAGE POTATOES 
1 large (family size) pkg. shredded hash browns (Ore-Ida)
1/2 cup (1 stick) butter
1 quart half & half (half milk/half butter)
salt and pepper, to taste (about 1/2 tsp. each)
1 tbsp. fresh chives or parsley
3 tbsp. grated Parmesan

In a large saucepan, melt butter. Pour off and reserve 1/4 cup. Add hash browns and half & half to pan. Cook for about 10 minutes, stirring well.

Pour mixture into a casserole dish. Sprinkle evenly with parsley or chives and Parmesan.

Bake at 375°F for about 40 minutes.

Note: Turn up the temperature to 400°F during the last 10 minutes if you prefer a crust.
