BANANA MUFFINS 
5 lg. ripe bananas, mashed
1 egg
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. sugar
1/4 c. butter, softened
1 c. pecans or walnuts, chopped
1 1/2 c. flour

Mix all ingredients except flour. Add flour and stir lightly. Pour on spoon into greased muffin tins or muffin cups. Bake 15-20 minutes at 375 degrees until golden brown. Makes 1 dozen large or 2 dozen medium sized muffins.
