BANANA MUFFINS 
5 lg. ripe, mashed bananas
1 egg
1/2 tsp. salt
1 tsp. baking soda
1 c. sugar
1 tsp. baking powder
1/4 c. soft butter
1 c. chopped pecans
1 1/2 c. flour
1/2 c. coconut

Preheat oven to 375 degrees. Mix all ingredients and pour into greased muffin tins. Bake 15 to 20 minutes.
