BANANA OATMEAL MUFFINS 
2 c. flour
1 c. sugar
5 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 1/2 c. oats
2/3 c. chopped pecans
2 eggs
6 tbsp. oil
1 c. milk
1 c. mashed bananas

Sift flour, sugar, baking powder, salt and soda into bowl. Stir in oats and pecans. Pour mixture of eggs, oil, milk and bananas into well in dry ingredients; stir until just mixed. Batter will be lumpy. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 minutes or until browned. Remove immediately. Makes 1 1/2 dozen.
