BANANA OATMEAL MUFFINS 
2/3 c. uncooked oats
1/2 c. milk
1 c. unsifted flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. mashed ripe banana (3 med. bananas)
1 egg, beaten
1/4 c. butter, melted

In a medium bowl, combine oats and milk; set aside. In another bowl, combine the flour, sugar, baking powder, soda, cinnamon and salt. Add the banana, egg and butter to the oat mixture; add the dry ingredients to the banana mixture, stirring just until moistened. Fill greased muffin cups about 3/4's full. Bake at 400 degrees F. 15 to 18 minutes or until wooden pick inserted in enter comes out clean. Makes 1 dozen muffins.
