BANANA MUFFINS 
6 lg. ripe bananas, mashed
1 egg
1/2 tsp. salt
1 tsp. baking soda
3/4 c. sugar
1 tsp. baking powder
6 tbsp. softened butter
1 c. chopped pecans
1 1/2 c. all purpose flour

Preheat oven to 375 degrees. Mix all ingredients, except flour. Gradually add flour, stirring lightly. Pour into standard paper muffin cups and tin. Bake 15 to 20 minutes or until golden brown. Yields 2 dozen regular muffins.
