CORN PUDDING 
1/4 c. egg substitute
1 lg. egg white
1 c. skim milk
2 tbsp. flour
1/4 tsp. baking powder
1/8 tsp. black pepper
1 1/3 c. fresh or frozen whole kernel corn
2 green onions, including tops, chopped fine
2 tsp. grated Parmesan cheese
Cooking spray

Oven at 350 degrees.

1. Whisk together egg substitute, egg white, milk, flour, baking powder and pepper. Stir in corn, green onions and cheese.

2. Spray 9 inch pie pan with Pam cooking spray, add corn mixture. Set pie pan in a shallow baking pan. Add enough water to baking pan to come halfway up the sides of the pie pan.

3. Bake uncovered for 1-1 1/4 hours or until knife inserted in center comes out clean and pudding is puffed and golden.
