BLUEBERRY COFFEE CAKE 
CAKE:

1 (7 oz.) pkg. blueberry muffin mix (Jiffy)
1/4 cup milk
1 egg
2 tbsp. shortening, melted

Preheat oven to 350°F. Grease an 8-inch square baking pan.

Stir ingredients well. Spread in pan, add topping, if desired.

Bake at 350°F for 20 to 25 minutes until light brown. Serve warm.

STREUSEL TOPPING:

1/4 cup brown sugar
1/4 cup chopped nuts
1 tsp. cinnamon
1 tbsp. baking mix (Jiffy or Bisquick)
1 tbsp. soft butter

Combine dry ingredients. Add butter and stir until mixture is crumbly. Sprinkle on coffee cake batter and bake as directed.
