SNOW WHITE BUTTERCREAM FROSTING 
2/3 c. water
4 tbsp. meringue powder
1 1/4 c. white shortening
11 1/2 c. confectioners' sugar, sifted
3/4 tsp. salt
1/4 tsp. butter flavoring
1/2 tsp. almond flavoring
1/2 tsp. clear vanilla

Combine water and the meringue powder in a large bowl. Whip on high speed until peaks form. Add 4 cups of the confectioners' sugar 1 cup at a time. Mix on low speed.

Alternately add shortening and remaining confectioners' sugar. Add salt and flavorings. Beat on low speed until smooth.

May be stored well covered in refrigerator for several weeks. Bring to room temperature before using. Makes 8 cups.

Recipe may be cut in 1/2 or doubled.

You'll find meringue powder at craft stores (in the cake decorating section) or at restaurant supplies.
