SUGAR PLUM PUDDING CAKE | |
2 c. all-purpose flour 1 1/2 c. sugar 1 1/4 tsp. baking soda 1 tsp. nutmeg 1 tsp. allspice 1 tsp. cinnamon 2 tsp. baking powder 1/2 tsp. salt 3/4 c. salad oil 3 eggs 1 c. buttermilk 1 c. cooked prunes, pitted and quartered 1 c. chopped walnuts (optional) Sift dry ingredients together 3 times. Add other ingredients in order given and mix well. Grease and flour bundt pan. Pour in cake mixture and bake at 375 degrees for 40 to 45 minutes. GLAZE: 1 c. sugar 1/2 c. buttermilk 1 tsp. vanilla 1 tsp. white corn syrup 1/2 c. (1 stick) butter Put all ingredients in a pan. Stir. Bring to boil. Pour over cake while cake is hot and still in pan. Let cake cool before removing from pan. (Half of glaze is plenty.) |
