STUFFED PEA PODS | |
4 oz. fresh snow peas 1/4 c. peas, fresh or frozen and thawed 4 oz. cream cheese 4 oz. cream cheese with chives 2 tbsp. mayonnaise 1/4 tsp. garlic powder 5 drops hot pepper sauce (or to suite your taste) 1 tbsp. finely minced green onion Remove strings from pea pods. Slit string side of pods to open. Remove peas. Puree 1/4 cup peas and the peas from the pea pods in food processor or blender. Add the minced onion and process until peas and onion are finely minced. Add the cream cheese, mayonnaise, garlic and hot pepper sauce; blend well. Using a pastry bag or cake decorating kit; fill pea pods with cream cheese mixture. You will have to use a big enough pastry tip (like a star tip) so the onions and peas don't get stuck in it. Refrigerate until serving time. These make an attractive addition to an appetizer tray because when finished; and chilled; they look like lily of the valley sprouting through their leaves. Makes about 36 appetizers. |
