SWEET POTATO CASSEROLE 
4 med. sweet potatoes
1 tbsp. butter
1/4 c. orange juice
2 tbsp. chopped walnuts
1/4 tsp. nutmeg

Cook whole sweet potatoes in boiling water 25-30 minutes or until tender. Peel and mash. Add butter, orange juice, walnuts, and nutmeg. Mix thoroughly.

Place in lightly oiled 1 quart casserole. Bake uncovered at 375 degrees for 25 minutes. Makes 6 servings.
