SWEET POTATO CASSEROLE 
40 oz. can sweet potatoes
1/2 c. sugar
2 eggs, lightly beaten
1 tsp. vanilla
1/2 c. milk
1/4 c. melted butter

TOPPING:

1 c. brown sugar
1 c. chopped walnuts, or pecans
1/3 c. melted butter
1/3 c. flour
1 c. flaked coconut (optional)

Mash drained sweet potatoes. Add sugar, eggs, vanilla, milk, and butter. Mix well. Put in 2 quart casserole. Mix topping together. Place on top of sweet potato mixture. Bake at 350 degrees for 30 minutes. Use broiler to brown top lightly, if desired.
